Anyone Have a Really Great Banana Bread Recipe?

We love your input at Chic Coles and I couldn't pass up the opportunity to ask our wonderful readers to weigh in on this one. I've got some bananas that are perfect for banana bread right now! Strangely though I do not have a great recipe. So this is where you all come in...does anyone have a really great banana bread recipe?!

This picture above includes chocolate chips, which I won't say no to. So folks, let's hear them. Anyone know of a great recipe?

You've come to the right place... or I've come to the right place. I make it enough that I'm pretty sure I have it committed to memory, so here goes nothing.

1 c sugar
1 stick softened butter
3 overripe bananas, mashed
2 eggs
1 tsp vanilla
2 c self-rising flour (make your own if you don't have it on hand by adding 1/4 tsp salt and 2.5 tsp baking powder to 2 c AP flour)
1/2 c toasted chopped pecans

Preheat oven to 350. In a large bowl, beat butter and sugar until creamy. Add mashed bananas, eggs and vanilla and mix well. Slowly add flour and beat until incorporated. Stir in pecans (sometimes I do chocolate chips too). Coat a loaf pan in cooking spray and add the batter evenly. Bake for about an hour or until a wooden toothpick or knife inserted in the center comes out clean. Enjoy!

My absolute favorite banana bread recipe is Jacked-up Banana Bread... it is!!

I am NOT a vegan, but I try to eat whole, healthy ingredients as much as possible. Just ate the last bite of this recipe:

3 ripe bananas
1/3 cup agave nectar
1 cup unsweetened applesauce
1 tsp vanilla
2 cups flour*
3/4 cup dark chocolate chips
1 tsp baking powder
1/2 tsp baking soda

*unbleached white or if using whole wheat, add 1 tbsp water

Bake at 350 for an hour & I promise it will be delish!

It is the best, and very simple, recipe I've ever had for Banana Bread! Not sure why it works so well, but every time is great. It's from the Winterthur Museum cookbook. If this doesn't open, and you still want it, let me know and I can email....

All time best.....butter, sugar, bananas, sour cream....need I say more. Just emailed this to our upholsterer this afternoon so I had to copy and paste. Barbara's Banana Bread from the Fenn School cookbook in Concord, MA....Can't go wrong with this one. It's a staple in our house

Banana Bread

½ cup butter room temp
1 ½ cups sugar
2 eggs
1 ½ cups flour
¼ tsp baking powder
¾ tsp baking soda
½ tsp salt
1 cup ripe mashed bananas (2-3)
¼ cup sour cream
½ tsp vanilla

Cream butter and sugar. Add eggs one at a time. Sift all dry ingredients and add a spoonful at a time. Mash bananas and add to mixture. Beat in sour cream and vanilla
Bake 1 hour at 350 in loaf pan with non-stick spray.
